A typical Italian feast consists of 5 courses - Antipasti (appetizers), Primi (first course pasta, soup, etc), secondi (meat course - not a giant steak), Contorni ( side dishes, vegatables) Dolci (sweets, not too much and not too sweet!) This menu guides you through each of these courses providing choices to mix and match as you create your own Italian Crowd Pleasing feast! 

 

In this 2 part series, (each class is priced separately so you can take one or both) you will master the authentic methods to create these dishes and more using the very best ingredients and techniques.

 

Day 1 Features an antipasto treat - Arrancini-  and a choice of pasta entrees

Day 2 features Secondi choices, Salad, and Classic Tiramisiu for the dolce!

  • Class 1: APPETIZERS & PASTA COURSES

    FEATURES MANICOTTI AND CANNELONI and ARRANCINI (SUPPLI ALLA ROMANA)

    You will master how to create light and delicate crepes to hold our Manicotti stuffed with Ricotta cheese and topped with San Marzano Marinara Sauce.

     

    You will also make sheets of thin pasta for our Cannelloni Stuffed with Chicken, Lemon,Cheese and Nutmeg and topped with a Creamy Veloute sauce.

     

    In addtion, you will make one of Italy's favortite little snacks to serve as a delicious appetizer - Suppli alla Romana (in the south these are known as Arancini) - little risotto balls stuffed with creamy mozzarella, breaded and fried. No matter which name they are called these are melt in the mouth delicious. PLEASE NOTE THIS CLASS IS  3 1/2 -  4 HOURS.

    Class 2: MAINS AND DOLCE

    FEATURES PORK BRACIOLE, CREAMY POLENTA, CLASSIC TIRAMSIU

    In this class we will focus on rolling and stuffing pork to create a delicious Braciole, or Involtini main course.Pork tenderloin is pounded and then stuffed with roasted red peppers, fresh spinach, fennel sausage, and mozzarella cheese and then braised in a light sauce of vermouth, tomatoes and rich stock.

    We will accompany this with an authentic creamy polenta side dish - very easy to make - comfort food at its best! We will top it with a Fennel, Sausage and Porcini Sauce. 

    Finally, we will round out our meal with a seasonal salad - Argula, Fennel and Oranges and then finish with Italy's most beloved dessert - Classic Tiramisiu. You will even learn how to make your own Mascarpone - superior to anything store bought!
